Summer celebration with Australian macadamias

To welcome the season of festive fun, Australian Macadamias has unveiled a new hero recipe that’s made for sharing, the Cherry and macadamia celebration sponge.

Light, luscious and layered with seasonal cherries, soft billows of whipped cream and a generous scattering of roasted macadamias, this cake really is a showstopper. The sponge layer itself is also studded with macadamia pieces, adding a delicate crunch and a naturally indulgent flavour to every bite.

This cake captures everything we love about an Australian summer: juicy stone fruit at its peak, easy gatherings with loved ones, and food that feels like a little luxury.

Ideal for festive tables, long lunches or a little wow, it’s a celebration in every slice. 

Cherry and macadamia celebration sponge cake recipe

Serves 8
Light, festive and full of flavour, this cake makes the most of seasonal cherries and the rich crunch of macadamias. Ideal for Christmas, summer entertaining, or when you want to impress without the fuss.

Ingredients

Sponge cake

  • 100g caster sugar
  • 4 eggs, separated
  • 125g plain flour
  • 60g butter, melted
  • 2 tbsp macadamia pieces

Cherries

  • ¼ cup water
  • 1 tbsp cornflour
  • 2 tbsp caster sugar
  • 1 tbsp lemon juice
  • 500–600g fresh cherries (or 300–400g frozen), pitted

To serve

  • 300ml thickened cream, beaten to firm peaks
  • ¾ cup whole macadamias (lightly roasted)

Method

Preheat oven to 180°C. Grease and flour a 20cm cake tin. Beat 80g sugar with egg yolks until thick and pale. In a clean bowl, beat egg whites to soft peaks, slowly adding remaining sugar until glossy. Fold whites into yolk mixture alternately with sifted flour, melted butter, and macadamia pieces. Bake for 20–25 minutes, or until a skewer comes out clean. Cool completely. 

For the cherry compote, whisk water, cornflour, sugar, and lemon juice in a saucepan until smooth. Bring to a simmer, then add cherries and simmer until thickened (5–6 minutes). Cool. 

To assemble, place the sponge on a serving plate, top with whipped cream, spoon over cherries, and scatter with macadamias. Serve with extra cherries and cream on the side.
